Soo domestic.

I'm pretty proud of myself.

Somehow in the mist of my mad-crazy-busy life
I have managed to find time to make a few of those
yummy recipes from "Skinny Taste" and...

THEY TURNED OUT GREAT!

Seriously, it makes me feel soo domestic- its not even funny.
I want to be one of those moms who can whip up anything
right from scratch without blinking an eye
and have it be like the best thing you've ever had in your life.

Martha Stewart (minus the going to jail part) is seriously someone I admire.

So here's a few things I've attempted from my newly favorite recipe site...
1.
Nojito.


Yes... just like a Mojito but without the alcohol. Soo yummy!!
This is totally a summer time drink but
I still made it the other night just because it looked like fun...
I mean, I even "muddled the mint leaves"! It doesn't get more legit than that, right??
I was proud. So if you'd like the "how-to"... here ya go ---> YUMMY NOJITO
2.
Black Bean, Avocado, Cucumber & Tomato Salad.


This is sooooo flippin' good its not even funny.
I was always one of "those kids" who would say "mom, what's that green thing?"
or "mom, I hate tomatos!" (when I'd never even tried them)
I swear my mom wanted to kill me a few times...
Thankfully I got out of that phase or else I'd totally be missing out.
I've made this every week religiously a few times now and
 I usually split it up in small tupperware & take it as a snack at work.

Red Pepper Egg-in-a-Hole.



Now if you know me, you KNOW breakfast is my favorite meal of the day.
Funny thing is... my husband doesn't even like breakfast (!!!!?!?)
I don't even know how that's possible but anyways...
THIS.RECIPE.IS.DELISH.

There's TONS more recipes on that site that I can't even wait to try.
Thankfully most seem pretty beginner chef status.
 I definitely go for easy peasy- so why not get super healthy while I'm at it?

I LOVE the egg in a hole! I had most mornings for about a month. I don't have it as often now but still it is quite yummy! I will have to try the nojito, I wanted to but didn't want to deal with the mint leaves :)

Ohh no the mint leaves aren't even a problem- super easy. I'd love to someday be able to grow some fresh mint leaves in some sort of a garden but just recently my friend gave me a pot of basil, I left it in the Vegas summer heat and forgot it water it... yeah that didn't work out so well. But really, the Nojito is delish.
I've been wanting to try the "skinny eggnog" since its getting cooler out!
